2019 with 70K problem free miles. Taking a long trip in December. I’ll change the belt before but wondering if I should do the water pump. Not leaking and my coolant system has been rock solid. I have a 125K premium warranty but I’d like to have nothing happen on the road. Change or leave well enough alone?

I'd say leave it. Cracking it open may end up introducing a new problem for you. Thermostat good though, I'd say that might be more problematic, I know some people had issues with their original thermostats and that there was some kind of "new" design.
